IntEnz Enzyme Nomenclature

Accepted name:
α-(1→3) branching sucrase
Other names:
branching sucrase A
Systematic name:
sucrose:(1→6)-α-D-glucan 3-α-D-[(1→3)-α-D-glucosyl]-transferase

The enzyme from Leuconostoc spp. is responsible for producing α-(1→3) branches in α-(1→6) glucans by transferring the glucose residue from fructose to a 3-hydroxyl group of a glucan.
