EC 188.8.131.522 - α-(1→3) branching sucrase
IntEnz Enzyme Nomenclature
- sucrose + a (1right6)-alpha-D-glucan = D-fructose + a (1right6)-alpha-D-glucan containing a (1right3)-alpha-D-glucose branch
The enzyme from Leuconostoc spp. is responsible for producing α-(1→3) branches in α-(1→6) glucans by transferring the glucose residue from fructose to a 3-hydroxyl group of a glucan.
